Ultra-soft treats made with fresh chestnut pollen
Fresh bee pollen pairs wonderfully with savory flavors! The proof is in this refreshing recipe by Alice Vanhoye, a blogger and naturopath who has created these delicious balls coated in fresh chestnut pollen.
Makes about a dozen balls
- 100g soaked almonds (soaked overnight, or for 8 to 12 hours)
- 6 large Medjool dates or about 10 Mazzafati dates
- 1 tablespoon Bourbon vanilla powder
- 2 tablespoons shredded coconut
- A pinch of Guérande fleur de sel
- 1 level teaspoon cinnamon
- 1 small ramekin half-filled with fresh chestnut pollen
- Pit the dates.
- Drain the almonds.
- Place all the ingredients in your blender and mix until you get a texture that is still "crunchy".
- Shape into nice little balls between your hands, then roll them in the pollen.
- Arrange everything on a beautiful plate. And there you go, it's ready!
